The fourth lot from Yemen we bring to our roastery stands out with its bold, tropical, and fruity profile, enhanced by the innovative and complex Alchemy processing method. This is one of the finest coffees Yemen has to offer today. In our cupping session, we tasted 26 samples before selecting this lot, which we rated with 90 QGrading points.
FLAVOR PROFILE
Yemen Hayma XI delivers a multi-sensory experience in the cup, with notes reminiscent of blueberries, vanilla, and exotic fruits. It impresses with its high body and juicy texture, wrapping around a bright, well-balanced acidity that enhances every sip. This coffee lingers in your memory long after the first taste. Its tropical sweetness extends into a long, delicious aftertaste.

ROASTING PROFILE
With 90 kgs in our roastery, we developed a uniroast profile, suitable for both espresso and filter. The medium roast level aims to preserve the natural quality of the bean - clean, sweet, and complex. The precision for the desired profile is obtained through daily practice and advanced roasting technology - Loring Smart Roaster.
GREEN COFFEE INFORMATION
This lot is one of Yemen’s finest specialty coffees, classified as a rare, competition-level coffee with a 90+ quality score. It combines the revolutionary Yemenia genetics with the innovative Alchemy processing method. Yemenia, a unique mother variety found only in Yemen, unveils an untapped genetic diversity, while Alchemy processing enhances its complex aromas through advanced fermentation and drying techniques. Grown in one of Yemen’s most iconic regions, this coffee pays tribute to the country's heritage, innovation, and sustainable coffee-growing legacy.
The coffee comes from small-scale farmers in the Hayma region of Sana’a, grown at an altitude of 2.200 meters.
Hidden in the western highlands of Sana’a, Hayma Dakhiliya is a historic and traditional coffee-growing region. For over 300 years, farming families in Hayma Dakhiliya have carefully tended their coffee trees, producing a coffee that truly reflects the region’s unique terroir. Today, around 400 coffee-growing families call this region home.
Founded in 2016, Qima Coffee is a renowned international organization specializing in coffee sourcing, development, and trade. For eight years, Qima Coffee has worked closely with Hayma Dakhiliya’s farming communities to tackle these challenges. Through training farmers in best agricultural practices and distributing genetically verified seedlings, Qima helps revitalize coffee trees and improve farmers’ livelihoods.
These efforts are crucial to preserving Hayma Dakhiliya’s legacy as one of Yemen’s most iconic coffee regions.
Beyond coffee sourcing, Qima Coffee has made major investments in researching Yemen’s coffee genetics, publishing numerous scientific studies on the subject. In 2020, Qima announced the discovery of Yemenia, a previously unknown genetic group within the Arabica species. Yemenia’s genetic profile stood out due to its unique, complex flavor potential and high resilience to climate change - a key trait that could benefit coffee farmers worldwide.
Yemen’s extreme coffee-growing conditions, marked by low rainfall and drastic temperature fluctuations, have undoubtedly shaped resilient coffee varieties over the past 600 years, from the 1400s to today.
This meticulously processed lot brings out the most complex notes. The Alchemy processing method, an advanced technique developed by Qima, is the result of over 1.300 precise experiments, redefining coffee processing through a data-driven approach. This unique technique, often called 'alchemy', has gained growing recognition in recent years. Alchemy processing combines pressure (up to 10 bar/145 psi), temperature control, gas regulation, and meticulous drying management to create unparalleled coffees with sensational flavor profiles and exotic, structured cups.
