This coffee features notes of apricot, cherry, and jasmine. Its high body provides a creamy texture that envelops a pleasant, medium acidity, harmoniously integrated into the coffee’s overall profile. The fruity and floral sweetness lingers long after the first sip, leaving behind an elegant and full aftertaste.

ROASTING PROFILE

With 90 bags in our roastery, we developed a uniroast profile, suitable for both espresso and filter. The medium roast level aims to preserve the natural quality of the bean - clean, sweet, and complex. The precision for the desired profile is obtained through daily practice and advanced roasting technology - Loring Smart Roaster.

GREEN COFFEE INFORMATION

The cherries in this lot come from the Gargari Gutiti washing station in the Gedeo zone, located in the Gedeb district, part of the greater Yirgacheffe region in southern Ethiopia. The cherries are sourced from multiple smallholder farmers, grown at an altitude of 1.983 meters.

The 'Supernatural' processing method refines Ethiopia’s traditional sun-dried natural process by enhancing controlled aerobic fermentation opportunities during drying. Gargari Gutiti stands out for its strict quality standards, ensuring no compromises in processing. Smallholder farmers in this region typically cultivate Jarc 74110, 7412, and 74165, sub-varieties of Ethiopia’s indigenous heirloom varieties, grown on small garden plots surrounding their homes.

In the traditional Ethiopian natural process, coffee cherries are spread in a thin layer on raised beds and sun-dried, either directly or indirectly. In contrast, the "supernatural" process involves spreading cherries in a thick layer on shelves inside a semi-permeable box. This design restricts direct sunlight exposure while allowing limited ventilation and oxygenation, which extends the total drying time and enhances the natural fermentation of the cherries’ latent sugars throughout the drying period.

To maintain high standards and prevent over-fermentation or mold, strict monitoring is a top priority. The processing team regularly tracks temperature, Brix levels, and humidity, making small adjustments to airflow and ambient temperature as needed. Once the optimal moisture content (around 12.5%) is reached, the cherries rest in a cool environment before undergoing secondary processing (hulling, grading, hand-sorting, and packaging in GrainPro bags for export).
