ROASTING PROFILE

With 70 kgs in our roastery, we developed a uniroast profile, suitable for both espresso and filter. The medium roast level aims to preserve the natural quality of the bean - clean, sweet, and complex. The precision for the desired profile is obtained through daily practice and advanced roasting technology - Loring Smart Roaster.

GREEN COFFEE INFORMATION

The Gesha lot from Hacienda El Rodeo was planted six years ago and is distinguished by a 68-hour anoxic fermentation process. During this process, coffee cherries are placed in an airtight container, where the absence of oxygen encourages the development of lactic bacteria. After fermentation, the beans are dried on raised beds for 13 days, ensuring controlled moisture evaporation, which enhances the coffee’s distinctive profile.

Hacienda El Rodeo, located in Curití, Santander, Colombia, was founded in 2011 by Alfonso Reyes, his wife Martha Camacho, and their son Cristian Reyes. Starting from scratch on an abandoned farm, they have dedicated themselves to cultivating high-quality Arabica coffee. Today, they have cultivated 135 hectares, with plans to expand by 10 more hectares within the next two years. The total farm area is 170 hectares, of which 25 hectares are preserved for nature conservation and wildlife protection.

At an altitude between 1.900 and 2.200 meters, the farm benefits from natural biodiversity, with native trees providing shade for the coffee plants. The harvest season runs from December to February, with a strong focus on producing high-quality coffee. The Reyes family cultivates naturally processed, washed, and honey-processed coffee lots, tailored to customer preferences.

The farm's main variety is Castillo, covering 85% of the cultivated area, while the remaining 15% is dedicated to exotic varieties such as Pink Bourbon, Gesha, and Sidra. From the beginning, their project has prioritized coffee quality, leading them to design state-of-the-art processing, drying, and storage facilities, adhering to strict hygiene and quality standards.

In 2023, Hacienda El Rodeo won first place in Colombia’s national competition, 'Colombia: Land of Diversity', organized by the Colombian Coffee Federation. Although new to the industry, their commitment and passion have earned them international recognition, enabling them to engage in direct trade and expand into global markets.
