FLAVOR PROFILE
Macadamia nuts, golden apples, toffee - these are the sweet notes that Colombia Galeras evokes in your taste memory. This coffee has a round body and creamy texture, accompanied by a medium-high, lactic and malic acidity.
Thanks to the natural Sugar Cane decaffeination process, which uses alcohol derived from fermented sugarcane, this coffee retains its exceptional flavor.

ROASTING PROFILE
With 21 bags in our roastery, we developed a roasting profile for espresso. The medium roast level aims to preserve the natural quality of the bean - clean, sweet, and complex. The precision for the desired profile is obtained through daily practice and advanced roasting technology - Loring Smart Roaster.
GREEN COFFEE INFORMATION
The small town of Buesaco, nestled in the Andean highlands of Nariño, Colombia, is home to the Cooperativa de Cafés Especiales de Nariño. This cooperative sources coffee from over 300 small-scale farmers in the hills surrounding the town. Each lot is carefully evaluated and purchased, with the cooperative offering higher prices for coffee produced through sustainable farming practices and meeting high-quality standards.
The cooperative’s goal is to create uniform and consistent lots in terms of bean size and flavor profile. This particular lot, Galeras – Decaf, comes from smallholder farmers around the Galeras Volcano and has been decaffeinated using the Ethyl Acetate process.
Ethyl Acetate is produced through the esterification of ethyl alcohol (derived from sugarcane fermentation) and acetic acid. The green coffee beans are soaked in a solution of water and ethyl acetate, which removes at least 97% of the caffeine. After decaffeination, the beans are steam-cleaned to remove any traces of ethyl acetate.
This method eliminates caffeine while preserving the beans’ natural flavor profile. This exceptional lot impressed us with its uncompromised taste, making it an exciting choice for coffee lovers who want to enjoy a cup at any hour of the day.
