Our close relationship with Esteban Zamora, built on shared values in coffee, has brought this origin to our roastery. Costa Rica El Cedro is a lot composed of cherries from two neighboring farms to Esteban’s. The sweetness and clarity convinced us to continue the spirit of good partnership - this lot is now part of the new Confort Blend.

FLAVOR PROFILE

We chose this origin for its clarity and sweetness. The flavor notes are sweet and reminiscent of toffee, chocolate, and citrus. It is a coffee with a medium-to-high body, a creamy texture and a malic acidity.

ROASTING PROFILE

We developed a roasting profile for espresso. This origin is used in Confort Blend, with a medium roast level, aiming to preserve the natural quality of the bean - clean, sweet, and complex. The precision for the desired profile is obtained through daily practice and advanced roasting technology - Loring Smart Roaster.

GREEN COFFEE INFORMATION

This lot comes from two producers in the Tarrazú region, Alfredo Umaña and Manuel Naranjo, whose farms neighbor Esteban Zamora, a farmer with whom we have had a close relationship since visiting his farm in 2018. Esteban's trust in the quality of the coffee cherries grown on these two farms led him to purchase and process them at his own processing station.

The coffee trees grow at 1.800 meters altitude, at the foothills of one of the highest peaks in the region, Cerro de la Cruz. The farms are surrounded by mountains and protected areas rich in flora and fauna, forming a unique microclimate specific to the town of Canet.

For processing, Esteban collects cherries from his neighbors and brings them to his micro-processing station built on his own farm. The cherries are sorted by flotation to remove lower-quality ones, then washed and mechanically depulped before being spread on drying beds for several days. After a few months of storage, the coffee is sent to a local dry mill in San Lorenzo, where it is mechanically sorted by density and size and manually inspected for defects.

Our trust-based relationship with Esteban is founded on shared values—we constantly strive to improve quality at a sustainable price for both producers and consumers. Esteban and his brothers have continuously invested in the vertical development of their farm since inheriting it from their father. They built their own processing station to experiment and enhance coffee quality. One of the brothers, Felipe, works at a fertilization company and regularly analyzes soil samples from their farm to determine which nutrients the coffee trees need.

Esteban’s spirit of good neighborliness, rooted in his trust in high-quality coffee cherries, extends all the way to our roastery. With recognized clarity and sweetness at the cupping table, we decided that El Cedro would become part of the new Confort Blend.
