Coffee Leaves Infusion is a delicate and pleasant infusion made from coffee leaves, suitable for any season. It can be enjoyed both hot and cold, over ice. The infusion is sweet, clear, and features notes reminiscent of honey, white peach, acacia, linden blossom, and jasmine.

ORIGIN & PROCESSING

The leaves come from Las Terrazas del Pisque, an unconventional coffee farm. Located in the middle of the desert in Ecuador, at an altitude of 2.000 meters, the farm thrives within an ecosystem that was entirely created from scratch in this arid region. Arnaud Causse, the dedicated farmer behind this project, personally planted 25 different species of trees, plants, and shrubs to provide shade, including inga, acacia, lemon trees, and avocado trees. He is known for avoiding pesticides and instead treating his coffee trees with essential oils of lavender and rosemary, which he produces himself. After harvest, the coffee leaves are carefully preserved and dried for infusion use. The coffee leaves develop a fine, delicate texture, a subtle sweetness, and a refreshing floral taste.

  • Steep time: 8 hours

SERVING RECOMMENDATIONS

After brewing, separate the mix of coffee leaves from the water immediately to prevent over-extraction and dryness.

Serve the infusion fresh – as it cools, the intensity of the aromas will fade.

Taste the infusion before adding any sweeteners – it naturally develops acidity and sweetness.
